Things I Eat: Bourbon Chicken 'n' Slaw

Good food can be super easy and take less time. Maybe that's with practice. I don't know how you roll. This is a pretty easy dump-in-the-crock-pot and slice-and-dice.

What You Need

  • Chicken thighs: I had a maybe 2lbs I had to use up. 
  • Broth: Chicken, beef or veggie. Whatever you like. You could use root beer - that's a fav.
  • Sweet onion: For the crockpot - make it one large one.
  • Garlic: Yum
  • Bourbon: Heh. .heh. Some for the pot, some for me! Maybe a cup.
  • Thyme, paprika - a hint of sugar if you want something sweet.

Slaw!
  • Red onion: Chop, chop!
  • Anise: Fennel, bulb thing - slice, slice!
  • Carrot: You can use any color. I used my veggie peeler to make ribbons.
  • Binder: I would use salt and olive oil, but, vinegar works too

What You Do
Put the chicken, onion, garlic, broth and bourbon in the crockpot. Don't skimp on the bourbon. You want to kind of cover the chicken. But, not all the way. You can add in some BBQ seasoning, thyme, paprika and other things if you would like.

Cook this until the chicken is shredding or you are hungry and it is cooked. Drain off any excess stuff you don't want.

Shred up your red onion, anise and carrot, get yourself some herbal bread. Make a salad.

The Daily Smooth: Traditional Breakfast

Oranges pretty much trump anything. And ginger. It's a good time. And there I am on webcam!

Things I Eat: Lavender Savory Salad

I call it a salad so I sound cool. Really, it's just me dumping a lot of stuff into a giant bowl.

I had two servings of this - a serving being everything I could fit into this white bowl we got as a wedding present for a serving bowl. For a group. Nope. I nom from this.

What You Need

  • 2 nectarines: Raw!
  • 6 ounces of spinach (a whole bag): RAW!
  • A bunch of strawberries: Raw!
  • Olive oil: RAW!
  • Herbes de Provence Fancy with Lavender & Savory from Frontier Co-Op: I found this in Whole Foods - you're on your own finding it. It is a blend of savory, thyme, rosemary, basil, tarragon and lavender flowers - it is RAW!
  • Buckwheat groats: Raw!
  • Salt (optional): RAW!


What You Do
Slice up the nectarines and strawberries. Throw in some spinach into the bowl. Throw in some of the fruit. Throw in some of the spinach. Whatever you want to do. Drizzle some olive oil over it and throw in a handful of buckwheat groats. Then get it all mixed up.

I guess you could put the oil, seasoning, salt and groats together and drizzle it over the bowl. But, who has time for extra dishes.

VOLA!



This is my first time with lavender as a seasoning - I like the seasoning. I don't know if I am crazy about lavender - maybe if it was with sugar. It reminds me of old people. . .like. .the bathrooms with the fuzzy toilet covers and crystals of lavender in the toilet roll holder. Lavender. . .yeah. That's what I think of.

However, I had two bowls of this. You get a little crunch with the groats and tang, sweetness from the fruit, spinach. . from the. .spinach and then a nice herbal boutique!

Perfect raw vegan dinner.

Pantsless Wednesday: Post 1

Yes, I still do #PantslessWednesday.

I am working on getting other people in on the tradition. The men are the most vocal about it, yet, no one had come in with a kilt on, yet. I don't know why. They keep saying they will. Odd.

Today's selection is this awesome number from Mod Cloth called I Rest My Grace, some tights and ankle boots. And a sweater, because it's cold.

Things I Eat: Duck Tacos with Cilantro Dressing

I love duck. However, duck is small and expensive.

Whatever. Duck tacos!

What You Need

  • 2lbs duck legs and thighs, bone in: It's expensive. 
  • 1 bunch cilantro: Fresh!
  • 2-3 Scallions: I got quality BIG ones. I used two.
  • 2 cups chicken stock: You could actually also use beer. I can't have beer.
  • Onion: I used one big onion.
  • Garlic: Can you ever have too much?
  • Tortillas: I used sprouted corn tortillas from Food for Life.
  • Bacon grease: Optional! I made bacon for breakfast and just put the grease in my French Oven for dinner.
  • Lime: Optional! I added some lime to my dressing thingy.

What You Do
Start by browning the duck. I think I could have browned it better. I followed directions by letting it sit for 4 minutes in my pan. Duck is delicious.


Once it was done on one side, I threw in the onions. Maybe I was suppose to put the onions in first. Or maybe after. I was. . .you know. .whatever. It all cooks together for about 40 minutes.


 And flip! I think I should have browned it a little longer? I'm not sure.


Great! Now to add in about 2 cups of chicken stock and I also put in the garlic. Duck is very flavorful on it's own and also fatty so you don't need to do a lot with it. It's not bland, that's for sure.



Ok, let this simmer like a champ for like an hour. You want the meat to be falling off the bones. My husband was hungry so I failed at 40 minutes of cook time and manually cutting the meat off the bone. Just saying.

The other thing you want to do is making your super-special topping. Get out a food processor and cut up your bunch of cilantro and green onions and add some garlic and olive oil. I used Bella Olive's Milanese Gremolata for added flare. You know. Live dangerously.

I don't think you need to chop anything. . but. .I have a small processor.


Blend until smooth! You could probably even put in some spinach or something, if you wanted. It's delicious. Unless you don't like these flavors, then it will be bad.


I got these Sprouted Corn Tortillas which I warmed with a damp paper-towel in the microwave for about 30 seconds. Then I assembled by putting the dressing on the tortilla then spinach and meat. My presentation is. . .not that good. Oh, I also made rice.



The food was good. I wish I had cooked the duck a little longer. I really liked the scallion-cilantro dressing thing. Duck is expensive so I feel like I did not do my money justice. It was a rough day, though.

I did save the broth and bones of the duck. I will be making another meal from it. :)
